Paddy's Famous Rum Cake


1 package yellow cake mix
1 sm box instant vanilla pudding
1/2 cup clear rum
1/2 cup vegetable oil
4 eggs

Combine all ingredients using a mixer for 2-3 minutes until smooth. The batter will be thick. Pour batter into greased or sprayed bundt pan.

Bake at 325 degrees for 45-55 minutes. Cool slightly and remove from pan to finish cooling.

Poke holes with a fork in all the sides, top and bottom of the cake and put the cake back in to the pan.

Pour the glaze all around the pan and it will soak into the cakes with the holes.

The Glaze:

1/4 cup water
1/4 cup clear rum
1 cube butter
1 cup sugar

Melt butter and then add other ingredients. Bring to a slow boil for about 4-5 minutes.

Let cool slightly and pour over cake. If cake is stuck after the glaze soaks in and cools and doesn't want to come out of the pan easily, place the pan in a sink of hot water for about 15 seconds and then turn and it should drop out.

I have made so many of these cakes and given them as gifts and they are always a hit.
